offers our clients the opportunity for wine tastings. We exclusively produce some of the rarest local varieties from the Struma Valley, with vineyards regulated for yield and grown ecologically. In the coming years, we aim for our vineyards to be cultivated using biodynamic methods to preserve the life of the vine as a plant while achieving technological maturity in our grapes.
You will have the opportunity for individual and organized wine tastings of our limited edition wines with our sommelier and wine technologist. We will present our concept, technology, and elegance of unique local varieties of wines, which we will taste with homemade meat delicacies and French cheese. Reservations can be made when booking your stay with us or at our reception, with a duration of 60 minutes. During this time, you will learn the basic characteristics of the varieties and wines from our oenologist.
A legendary old grape variety with modern technology. A neutral grape variety comes from the oldest vines. The vines are cultivated using "Dry farming" to accumulate aromatic notes in the mature grapes. Handpicked in 10kg crates, cooled, and crushed. The use of the "stabilization" technique and long "steeping" give our Keratsuda wonderful notes of pears and green apples. Long and well-structured acids finish with minerality in the aftertaste.
Provencal-style rosé with remarkable hints of strawberry. It stands out with terroir flavors of black wild fruits and prolonged juiciness in the middle. Characterized by sweetness and freshness, derived from the steep slopes where the vines are grown. It pairs well with calamari, octopus, or sea bream.
A blended wine with very good intensity and aftertaste. Pronounced notes of leather tobacco and sugared cherries. A tight and fresh wine with great aging potential. The wine is WITHOUT added sulfites and wild fermentation. Suitable for ribeye steak, pepper steak, as well as pork tenderloin.
